JIFFY BANANA NUT BREAD 
1 c. sugar
1/4 c. shortening
2 eggs
3 crushed ripe bananas
2 c. Jiffy baking mix
1/3 c. chopped nutmeats

Cream sugar and shortening. Add eggs and crushed banana. Add Jiffy baking mix and nuts. Stir until well mixed. Pour batter into a well-greased and floured 9x5x3 inch loaf pan.

Bake about 55 minutes in preheated 350°F oven. Remove from pan. Cool on rack before slicing.

The original jiffy banana nut bread recipe is hands down the best recipe ever...its so super moist and has just the right crispy edges in the loaf pan... I stopped making it when I lost this recipe because I always compared it to this original jiffy recipe. Thank you for posting this!!!

I actually made a copy of the back of the box at one point so I would have the recipe in the event Jiffy stopped putting it on the box. Here it is, just as it used to appear:

3/4 cup sugar
1/4 cup shortening
2 eggs
2 cups Jiffy Baking Mix
1 cup Mashed ripe banana
1/3 cup chopped nuts

Preheat oven to 350. Grease 9"x5" loaf pan.
Cream sugar and shortening. Add remaining ingredients. Stir until well mixed. Pour batter into prepared pan. Bake 55 minutes. Cool slightly before removing from pan.

A few tips
You can save over-ripe bananas by tossing them into the freezer. Wash the outer peel, then place in freezer (still in the peel) until you need them.
To thaw: Place in bowl, still in skin, until thawed. SAVE the liquid that drains out as they thaw. Remove & discard peel. Mash thawed bananas, along with the 'banana juice' for use in your bread.
I ALWAYS add more than 1 cup banana, using sometimes as much as 1.5 cups. Because this makes the bread moister, it sometimes takes a bit longer to cook. If the top is getting over-brown, tent with foil.
I add a topping of chopped nuts & sugar before baking.
Like everyone else here, I think Jiffy Banana Nut Bread, ORIGINAL RECIPE makes the very BEST banana bread around!

OMG!!! because I've gone blind in my left eye and will be 70 year old in October, I don't cook like I used to. However, wanted a hot biscuit.
