BAKED ONIONS 
12 sm. onions (or 1 can Durkee's boiling onions)
1 tbsp. unbleached flour
3/4 c. milk
1/2 tsp. salt
1/4 tsp. white pepper
1 c. grated American cheese
Cayenne pepper to taste (about 1/8 tsp.)
1/4 c. roasted, salted sunflower seeds

Boil onions until tender, or if canned, drain well. Place in the bottom of a buttered 1 quart casserole. Melt butter in a small skillet, stir in flour. Add milk, stirring with a wire whisk until smooth. Cook and stir until thickened, about 1 minute. Add cheese and stir until melted; season with salt, pepper and cayenne. Pour over onions and top with sunflower seeds. Cover, bake at 400 degrees for 20 minutes or until bubbly.

Preparation time: 30 minutes. Yield: 4 servings.
