BAKED MACARONI AND CHEESE | |
1 (8 oz.) pkg. macaroni, broken into short lengths 2 tbsp. butter 2 tbsp. flour 1/2 tsp. salt 1/8 tsp. pepper 2 c. milk 2 c. (1/2 lb.) grated Cheddar cheese, divided Cook macaroni in boiling salted water according to directions on package. Drain; rinse with cold water. Melt butter; stir in flour and seasonings. Cook about 1 minute over simmer heat. Add milk; cook over medium heat, stirring constantly, until thick and smooth. Remove from heat; add 1 cup grated cheese; stir until cheese is melted. Add macaroni; transfer to 1 1/2 quart casserole. Top with remaining cheese. Bake in 350 degree oven 30 to 40 minutes until cheese is brown. Yield: 6 servings. |
