CANDIED PECANS 
4 c. pecan halves
1 1/2 c. sugar
1/2 c. water
1/4 c. honey
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. vanilla

Preheat oven to 375 degrees. Spread nuts over baking sheet. Bake for 10 minutes while preparing the sauce. Butter a 2 quart saucepan. Combine sugar, water, honey, salt, and cinnamon. Stir until the sugar dissolves. Cook mixture to 236 degrees (soft ball). Stir only occasionally. Remove from heat. Add vanilla and beat by hand slightly. Put the pecans from the oven into the mixture. Well coat the nuts. turn out onto a buttered cookie sheet. Separate nuts with 2 forks. Let dry and serve.
