CLASSIC QUICHE 
4 to 8 slices bacon, cooked and crumbled (optional)
2 or 3 tbsp. chopped onion or chives
1/2 to 1 c. steamed vegetables well drained, broccoli, cauliflower, spinach or sliced sauteed mushrooms
1 c. grated Swiss cheese, Cheddar or Monterey Jack
4 eggs
1 c. milk or cream
Dash of salt
Dash of pepper
Dash of ground nutmeg or mace
2 tbsp. grated Parmesan cheese
9 or 10 inch pie shell

Lightly butter bottom of the crust. Sprinkle bacon, onion, vegetables and cheese into pie shell. Combine eggs and milk until well blended. Add seasonings. Pour egg mixture over ingredients in pie shell. Sprinkle with Parmesan cheese.

Bake at 350 degrees for 35 minutes or until knife inserted in center comes out clean. Cool 10 minutes before serving.
