CRACKERJACKS | |
1 gal. popped popcorn 1 c. raw peanuts 1 c. brown sugar 1/4 tsp. baking soda 1/4 c. light corn syrup Salt to taste 1 stick butter Pop corn and add raw peanuts in a large roasting pan. Stir together. Combine brown sugar, butter, corn syrup and salt and bring to a rapid boil. Boil for about 4 minutes, stirring often. Remove from heat and add soda. Mix well. Pour mixture over popcorn and peanut mixture; mix well. Bake for 1 hour at 250 degrees. Stir every 15 minutes as the mixture will burn on the bottom. DO NOT OVERCOOK. Crackerjacks are done when peanuts are roasted. |
