SPICY PEANUT SAUCE 
1/3 c. hot water
1/3 c. peanut butter
2 tsp. soy sauce
2 tsp. white wine or rice vinegar
1 tsp. sugar
2 cloves crushed garlic
1/4 tsp. red pepper flakes
2 scallions, finely chopped (optional)

Whisk together all ingredients. Let sit for 15 minutes so flavors combine together. Serve as a dip or as a sauce over pasta.
