ENCHILADAS 
1 doz. tortillas
1 lb. ground beef
1 med. onion
10 oz. can (Old El Paso), enchilada sauce (mild)
1 lb. 5 oz. can of refried beans
Salt and pepper to taste
1 lb. grated sharp cheese
1 sm. can olives (optional)

Fry meat, onions, salt and pepper until meat is brown and broken up. Add enchilada sauce and refried beans; stir until all mixed together. Take the tortillas and put some meat and cheese in center and roll up; put some meat and cheese in center and roll up; put side by side in a 9 x 13 inch greased dish. Do all 12 tortillas this way. If any meat mixture is left pour over top and then rest of cheese. Garnish with olives. Bake in 350 degree oven for 30 minutes. If you like make a day ahead of time and refrigerate or you can freeze it until you are ready to use. Serves 6 to 8. Comments: Great take along dish for potlucks.
