SPANISH COFFEE CAKE 
2-1/2 c. sifted flour
1 c. brown sugar
1/2 tsp. salt
3/4 c. sugar
1 tsp. cinnamon
3/4 c. oil
1 c. buttermilk
1 tsp. baking soda
1 tsp. baking powder
1 egg
1 tsp. vanilla

Note: 1 cup of milk plus 1 tablespoon vinegar may be substituted for the buttermilk.

Mix the first 6 ingredients until crumbly. Reserve 3/4 cup. Add rest of ingredients and beat for 2-3 minutes. Place in greased and floured 9x13 inch pan. Sprinkle 3/4 cup of reserved mixture over this.

Bake at 350°F for 30 minutes.
