SPANISH COFFEECAKE 
2 1/2 c. all-purpose flour
1 c. brown sugar
1/2 tsp. salt
3/4 c. sugar
1 tsp. cinnamon
3/4 c. vegetable oil
1 tsp. baking soda
1 c. buttermilk
1 egg
1 tsp. baking powder
1/2 c. chopped nuts, for topping

Mix flour, brown sugar, salt, sugar, cinnamon and vegetable oil together. Set aside 1/2 cup batter for topping.

Put baking soda in buttermilk. Add egg, baking powder and buttermilk to batter, mix together and beat 2 minutes. Pour into 16x10-inch pan.

Mix 1/2 cup chopped nuts into reserved batter and sprinkle over top. Bake at 350°F for 40 minutes.
