SPANISH CAKE 
1 c. brown sugar
1 c. flour
1 tsp. baking powder
3/4 c. chopped nuts
1/2 c. butter
1/2 c. milk
1 tsp. cinnamon
2 eggs (separated)

Cream butter and sugar. Add egg yolks beaten with milk. Sift flour, baking powder and cinnamon with walnuts and add to first mixture. Beat egg whites until stiff and fold into mixture.

Bake at 350°F until a toothpick inserted in center comes out clean. Ice with caramel icing.

ICING:

1 c. brown sugar
3 tbsp. milk or cream
1 tbsp. butter

Mix and bring to a boil. Add icing sugar until spreadable and add 1/2 teaspoon flavoring.

Except for a couple of minor differences, (1 tbsp. cinnamon and white sugar instead of brown) this is the recipe my grandmother first taught me to make, and to this day it's still one of my favorites. We always baked this in a 9x5 loaf pan. I'm going to try this with the brown sugar. Just a wonderful childhood memory and so happy to see the recipe here!
