NESTED EGGS 
8 oz. pared potatoes, boiled & mashed
1 tsp. chopped chives
1 med. tomato, peeled, seeded & chopped (1/2 c.)
1/2 c. chopped onion
Dash each of salt & pepper
2 eggs, poached

In bowl combine mashed potatoes and chives. Divide mixture into 2 equal balls, flatten and shape each ball into a round shape. Place on nonstick baking sheet and bake at 375 degrees for 15 minutes or until lightly browned.

With a broad spatula transfer potato nests to serving platter and deep warm. In saucepan cook tomato and onion until soft, add salt and pepper. Place a poached egg on each potato round and top each with 1/2 of the tomato mixture. Serve with 1 cup tossed salad. Serving = 4 ounces protein, 1 cup starch, 1 cup vegetable, 1 cup salad.
