SPICED TEXAS PECANS 'N CREAM 
SPICED PECANS:

5 oz. pecan pieces
1 tbsp. egg white
1/2 tbsp. water
1/4 tsp. allspice
1/4 tsp. cinnamon
1/8 tsp. nutmeg
1/8 tsp. salt
1/4 c. sugar

Mix all ingredients except pecans. Add pecans and stir until well coated. Place on baking sheet and bake at 275 degrees for 45 minutes to 1 hour, stirring every 15 minutes. Cool.

ICE CREAM:

2 1/4 c. heavy cream
3/4 c. milk
3/4 c. packed light brown sugar
3 egg yolks
1 c. spiced pecans

Heat cream, milk and sugar, stirring occasionally, until sugar is dissolved and mixture is hot. Whisk egg yolks in bowl. Stir whisking, slowly pour in 1 cup of hot liquid. Pour slowly back into saucepan, whisking constantly.

Cook over medium heat, stirring constantly, until mixture thickens and coats back of spoon. Do not boil. Strain into clean bowl and chill thoroughly. Stir in nuts. Put into Donvier ice cream maker and freeze. Makes 1 quart.
