RAISIN FILLED COOKIES 
1 c. sugar
1 c. butter
1 egg
1/2 c. sweet milk
3 1/2 c. flour
1 tsp. baking powder
1 tsp. salt
1 tsp. vanilla

FILLING:

1 c. chopped raisins
3/4 c. sugar
2 tbsp. flour
1 c. boiling water
1 1/2 tsp. lemon rind

Mix well and bring to boil and mixture thickens. Cool. Cream sugar and butter; add egg, then milk. Add dry ingredients. Roll real thin. Place one cookie on sheet, add teaspoon filling, cover with second cookie, and press edges to seal. Bake at 350 degrees for 8-10 minutes.
