EASY RAISIN FILLED COOKIES 
1 c. butter
2 c. brown sugar
3 eggs
1 heaping tsp. baking soda
1 tsp. salt
1 tsp. vanilla
4 c. flour

FILLING:

1 lb. box raisins
1 c. sugar
2 tsp. cornstarch
1 tbsp. lemon juice
1 egg

Mix filling ingredients together. Cook until thick.

Mix ingredients in order given. Shape into 2 or 3 round logs or rolls, about 2 1/2 to 3 inches in diameter. Chill and slice thin. Put filling between 2 slices of dough. Bake at 350 degrees for 12 to 15 minutes on cookie sheet. Other fruit fillings can be used.
