CREAM OF BROCCOLI AND CHEESE
SOUP
 
2 c. chopped celery
1 c. finely chopped onion
1 pkg. chopped broccoli (10 oz.)
1 c. cottage cheese
2 c. whole milk
1 can cream of chicken soup
Salt and pepper to taste

Cook celery, onion and broccoli in 2 1/2 quart covered casserole in microwave on high for 6 minutes, stirring after 3 minutes. Set aside.

Blend cottage cheese in blender or food processor until very smooth. Slowly add milk while still blending. Add chicken soup and blend. Add this to cooked and undrained vegetables. Microwave on high until heated through, about 3 minutes. Do not boil. Add salt and pepper. Serves 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
