APPLESAUCE RAISIN COOKIES 
1 c. (2 sticks) butter, softened
1 c. brown sugar, packed
1 c. applesauce
1 tsp. vanilla
1 egg
2 c. all purpose flour
1 tsp. baking soda
1/2 tsp. salt, optional
1 tsp. cinnamon
2 1/2 c. oatmeal (uncooked) quick or regular
1 c. raisins

Preheat oven to 375°F.

Beat butter and sugar until creamy. Add applesauce, egg, and vanilla. Beat well. Gradually add combined flour, baking soda, salt and cinnamon. Mix well. Stir in oats and raisins.

Drop by rounded tablespoons on ungreased cookie sheet. Bake 11 to 13 minutes or until light golden brown. Cool for 1 minute on cookie sheet. Remove to wire rack and cool completely.

Store covered at room temperature.

Makes about 4 dozen cookies.
