APPLESAUCE OATMEAL COOKIES 
2 c. sugar
1 c. shortening
2 eggs, well beaten
3 1/2 c. flour
2 c. oatmeal
1 tsp. salt
2 tsp. cinnamon
2 c. applesauce with 2 tsp. baking soda added
1 tsp. nutmeg
2 c. raisins
2 c. walnuts

Cream sugar and shortening; add the eggs. Add the applesauce/soda mixture and mix well. Sift together flour, salt, nutmeg and cinnamon and add. Add oatmeal, raisins and nuts last. Drop by teaspoons on greased cookie sheets and bake in 400°F oven for about 12 minutes.

Makes 7 dozen cookies.

Very tasty! They seemed a bit dry though so I will use less flour next time. I substituted softened butter for the shortening. Used half brown sugar and half white. This recipe makes a lot - about double a usual cookie recipe so you can either freeze the extras or make double batch.

If the oven is at 400°F then I would recommend leaving them in for only 5 to 6 minutes. It would be about 10 minutes with the oven at 350°F. Keep a close eye on them, one extra minute and they're very dark in color but not quite burnt. Other than that, they all turned out delicious!
