APPLESAUCE-OATMEAL DROP COOKIES 
2 c. flour
1 c. rolled oats
1 tsp. cinnamon
1 tsp. baking soda
1 c. applesauce
1/2 tsp. salt
1/2 c. butter
1 c. packed brown sugar
1 egg

Mix well the flour, oats, baking soda, cinnamon and salt; set aside. In a large bowl, cream butter and sugar. Beat in egg and stir in flour mixture alternately with applesauce until well blended. Drop by teaspoon 2" apart on a greased cookie sheet. Bake for 10 minutes or until golden brown around edges and top springs back when lightly pressed. Remove to racks to cool. Makes 60 cookies. Oven temperature: 375 degrees.
