AUNT JEANNE'S ZUCCHINI BREAD 
3 eggs
1 c. salad oil
2 c. sugar (1 white/1 brown)
2 c. grated zucchini squash, peeled & grated
2-1/2 c. sifted flour
1/4 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
2-1/2 tsp. cinnamon
3 tsp. vanilla
1 c. coarsely chopped pecans

I use a regular hand grater, but you could use a blender.

Beat eggs, add sugar, oil and zucchini. Sift dry ingredients together and add to above mixture. Add vanilla and nuts. Pour into greased 8-1/2 x 4-1/2 x 2- 5/8 inch bread pans. Bake at 350 degrees for 1 hour. Makes 2 loaves.

NOTE: A 5 x 9 inch loaf pan is a little too large for this bread.
