MANDARIN ORANGE AND PINEAPPLE
SALAD
 
1 (11 oz.) can mandarin oranges, drained
1 (20 oz.) can pineapple chunks, drained
2 c. sm. curd cottage cheese
1 (8 oz.) carton frozen whipped topping, thawed
1 tsp. vanilla extract
1 (6 oz.) pkg. orange gelatin
1/4 c. chopped pecans
1/4 c. coconut

Combine first 5 ingredients; sprinkle gelatin over mixture and stir well. Spoon mixture into 9x13x2 inch dish. Combine pecans and coconut. Sprinkle over salad. Chill 6 hours or overnight. 8 servings.
