WHITE FUDGE 
2 c. granulated sugar
1/3 c. dairy sour cream
1/3 c. white corn syrup
2 tbsp. butter
1/4 tsp. salt
2 tsp. vanilla, rum or brandy flavoring
1/4 quartered candied cherries
1 c. coarsely chopped nuts

Combine first 5 ingredients in saucepan; bring to a boil slowly, stirring until sugar dissolves. Boil, without stirring, over medium heat, to 236 degrees on candy thermometer. Remove from heat and let stand 15 minutes. Do not stir. Add flavoring, beat until mixture starts to lose its gloss (about 8 minutes). Stir in the candied cherries and nuts; quickly pour into a greased shallow pan approximately 8 x 8 inches. Cool and cut into squares.

Variations: Squares: Cut fudge into squares. Place on fork and dip in melted chocolate to coat sides. Cool on wax paper.

Bon Bons: Roll fudge into round balls and coat with coconut.
