SWEET AND PUGENT VEGETABLES 
1 lb. vegetables
2 to 3 tbsp. sugar
3 tbsp. vinegar
1 tbsp. soy sauce
1/2 tsp. salt
1 tbsp. corn starch
2 tbsp. water
2 tbsp. oil

Hard vegetables should be parboiled. In one cup combine sugar, vinegar, soy sauce and salt. In another cup blend cornstarch and cold water to a paste.

Heat oil. Add vegetables and stir-fry until half done. Add vinegar-sugar mixture; stir fry two minutes more. Stir in cornstarch paste to thicken and serve at once. 4 servings.
