MEXICAN DINNER CASSEROLE 
1 lb. ground beef
1 (16 oz.) can kidney beans
1 (16 oz.) can tomato sauce
1 jar taco or enchilada sauce
1 tbsp. minced dried onion
1 tbsp. Mexican style or reg. chili powder
A few sprinkles of hot pepper flakes
1/2 bag cheese nacho chips
1 c. Monterey Jack cheese, grated

Brown hamburger meat in 2 tablespoons olive oil. When beef is browned, add kidney beans with liquid, tomato sauce, taco sauce, chili powder, and dried onion. Add nacho chips and grated cheese and mix well. Pour into a greased casserole or baking dish and bake at 350 degrees for 30-40 minutes until hot and bubbly. (The mixture will be very moist prior to baking but will have a firm consistency after baking.) A good dish to take to a pot luck supper. Serves 4.
