EGG SCRAMBLE 
2 tbsp. butter
2 tbsp. flour
2 c. milk
1/2 tsp. salt
1/8 tsp. pepper
1 c. shredded cheese
1 c. chopped Canadian bacon or cooked sausage, drained
3/4 c. chopped green onion
3 tbsp. butter
1 dozen eggs, beaten
1 (4 oz.) can mushrooms, drained
1 1/2 c. buttered bread crumbs
1/8 tsp. paprika

Combine 2 tablespoons butter and flour blending until smooth. Cook over low heat until bubbly. Gradually stir in milk. Cook until smooth and thickened. Add salt, pepper and cheese, heat until cheese melts; set aside.

Saute bacon and onions in 3 tablespoons butter until tender. Add eggs, cook until set. Fold in mushrooms and cheese sauce.

Spoon into lightly greased 12"x7"x2" baking dish; top with crumbs and paprika. Bake 30 minutes at 350 degrees. Yield: 8 to 10 servings.

May be prepared ahead and refrigerated until time to bake.
