PINEAPPLE MUFFINS 
2 c. sifted flour
3 tbsp. sugar
3 tsp. baking powder
1/2 tsp. salt
1 egg
1 c. crushed pineapple with juice
3 tbsp. oil or melted butter

Sift dry ingredients into a bowl. Beat egg and add pineapple and oil. Dump mixtures into dry ingredients and stir just enough to moisten all of flour mixture. Spoon into greased muffin cups and bake at 425 degrees for 15 to 20 minutes. Makes 12.
