PINEAPPLE MUFFINS 
4 c. flour
8 tsp. baking powder
1 tsp. salt
1/2 c. butter
1 c. white sugar
2 eggs
2 c. undrained crushed pineapple
1/2 c. pecans or macadamia nuts

Sift flour with baking powder and salt. Cream butter and sugar until light and fluffy. Beat in eggs. Add flour, alternating with pineapple, stirring only to blend. Fill paper lined muffin cups 2/3 full. Bake at 400 degrees for 20 to 25 minutes. Makes 2 1/2 dozen.
