CHILI - HOMINY CASSEROLE 
4 slices bacon
6 tbsp. all-purpose flour
1 tsp. sugar
1 tsp. salt
1 tsp. chili powder
2 1/4 c. tomatoes
3 c. hominy
2 c. onion rings
1 c. shredded American cheese

Saute bacon in large frying pan until crisp; set aside. Add enough shortening to bacon drippings in pan to make 4 tablespoons. Blend in flour, sugar, salt and chili powder; stir in tomatoes and cook, stirring constantly, until mixture is thick. Layer hominy, onion rings and tomato mixture in a 2 quart baking dish. Sprinkle with cheese and top with bacon slices. Bake at 325 degrees about 25 minutes. Yield: 6-8 servings.
