CORNBREAD CASSEROLE 
1-2 lbs of lean burger

Fry in a large cast iron skillet with some olive oil, minced garlic (to taste), season meat with Lawry's Garlic Salt, pepper. Drain if necessary. Add:

1-2 cans of diced tomatoes
1 large onion, chopped
1-2 cans of green chilis

Add:

1 can Yellow Hominy

Mix cornbread separately.

1 cup cornmeal
3/4 cup flour
3 tsps baking powder
1 tsp salt
1/4 cup cannola oil
2 eggs beaten
1 cup milk

Stir just until mixed. Add cheddar cheese to taste on top of meat mixture (1-2 cups) then pour cornbread batter on top and bake in hot oven (400°F) in cast iron skillet until cornbread is brown and meat mixture is bubbly (for about 28-33 minutes).
