EL GRANDE BURRO 
12 inch flour tortillas
Shredded lettuce
Chopped, peeled, fresh tomatoes
Monterey Jack and mild Cheddar cheese (shredded and mixed)
Chopped green onions
Cooked ground beef (directions follow)
Your favorite spicy sauce
Sour cream
Refried beans
Spanish rice

Saute ground beef until brown and season to taste.

Lay out tortilla and spread on a layer of sauce, followed by meat. Sprinkle on vegetables and cheeses. Roll/wrap tortillas. Arrange tortillas in a lightly greased baking pan or on a baking sheet and heat at 350 (in oven) until heated through--12-20 minutes.

Top burro with sour cream and serve with refried beans and Spanish rice.
