SPINACH PIE | |
1 frozen deep dish pie shell 3 tbsp. butter 1/4 c. diced onion 1 lb. ground beef 1 (10 oz.) pkg. frozen chopped spinach, thawed 3/4 tsp. salt 1/4 tsp. pepper 2 lg. eggs 1 c. (1/2 pt.) whipping cream 1 c. grated cheddar cheese (more if like) 1/8 tsp. nutmeg (optional) Preheat oven to 400 degrees. Prick pie shell all over with fork and bake 15 minutes or until lightly browned. Brown beef and onion in butter. Squeeze spinach with hands to remove moisture. In bowl, mix beef, onion, spinach, salt, pepper, and nutmeg. In another bowl beat well eggs with cream and stir into meat mixture. Add 1/2 cup of cheese. Pour into pie shell and sprinkle with 1/2 cup of cheese (more if you like). Turn oven to 375 degrees. Bake 35 minutes. Let stand 5 minutes before serving. |
