STRAWBERRY JAM 
1 qt. strawberries
4 c. sugar
Juice of 1/2 lemon

Wash, dry and stem strawberries. Place them in a heavy enamel or stainless steel cooking pot, mashing a few berries to release a little juice. Cover berries with the sugar and stir gently over low heat until mixture is juicy, using a wooden or stainless steel spoon. Raise heat to moderate and stop stirring. After mixture begins to bubble (no stirring) cook exactly 15 minutes, using a timer. At end of time period, remove pot from heat. Allow to cool uncovered; sprinkle surface with lemon juice. When completely cooled, stir berries lightly; then place in sterile jars.
