SWEET AND SOUR SPARERIBS 
1/2 c. cider vinegar
1/2 c. brown sugar
1/4 c. sherry
1 tbsp. soy sauce
1 tsp. grated fresh ginger
1 tsp. cornstarch
1 tbsp. water
1 slab pork ribs
Extra soy sauce

Parboil ribs 3 to 4 minutes, drain, and brush with soy sauce. Bake at 350 degrees uncovered on a rack in a shallow pan for 1 hour. Mix first 5 ingredients and boil briefly in a saucepan. Mix cornstarch and water together, then add to saucepan mixture. Cook until transparent. Pour sauce over ribs and serve immediately. Serves 3.
