5 boiled potatoes
3 hard boiled eggs
1 big minced onion
2 stalks chopped celery
1/2 chopped green pepper
2 med. carrots, sliced
1 tsp. salt
1 tsp. pepper
1/2 c. mayonnaise (or enough to moisten)
8 radishes

Cool and peel potatoes. Cut into bite sized cubes. Mix onions, celery, hard boiled eggs cut into bite sized pieces, green pepper, carrots, salt and pepper and combine gently with potatoes. Add mayonnaise and stir lightly until well mixed. Chill. Garnish with sliced radishes.

When I mean famous, I mean FAMOUS! My mother will bring her famous potato salad to my niece's birthday party, my sister's anniversary party, my brother's graduation party, uncle Joe's coming home party, and my wedding.
