SMOTHERED RABBIT 
4 to 5 lb. rabbit, cut up
2 lg. onions, chopped
1 lg. bell pepper, chopped
1 lg. head garlic, chopped
2 tbsp. flour
1 c. oil

Parboil cut up rabbit until a foam is in your pot (about 10 minutes). Take rabbit out of the water and put it in a heated iron pot or magnalite pot with 1 cup oil. Brown rabbit real well, then add seasoning. After seasoning is browned a little, put 2 tablespoons of flour in the bottom of the pot, stir well. Add about 2 cups of water and let that simmer until tender. If it drys up keep adding a little water at a time until tender. Serves 6.
