WALNUT OAT BATTER BREAD 
1 1/2 c. boiling water
1/2 c. butter
1/3 c. sugar
1 tbsp. salt
2 pkgs. active dry yeast
1 c. warm water (110 to 115 degrees)
2 c. quick or old-fashioned oats, uncooked
2 eggs
1 1/2 c. whole-wheat flour
1 c. chopped walnuts
4 1/2 to 5 1/2 c. unsifted all purpose flour

1. In large bowl, combine boiling water, butter, sugar and salt, stirring until butter is melted; cool to lukewarm.

2. Dissolve yeast in warm water. Stir dissolved yeast, oats and eggs into lukewarm water mixture. Add whole-wheat flour; beat until smooth.

3. Stir in nuts and enough all purpose flour to make a stiff batter. Cover; let rise in warm place about 1 1/2 hours or until double in size.

4. grease two 9 x 5 x 3 inch loaf pans. Stir down batter. Drop batter by spoonsful, mounding in center, into prepared pans. Let rise, uncovered, in warm place about 45 minutes or until nearly double in size.

5. Heat oven to 375 degrees. Bake 45 to 55 minutes or until golden brown. Remove from pans. Cool on wire rack at least 1 hour before slicing.

Makes two 9 x 5 inch loaves.
