APPLE CIDER CAKE 
2 1/2 c. sifted Swan's Down cake flour
2 tsp. Calumet baking powder
1/4 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 1/2 c. sugar
3/4 c. shortening
3/4 c. sweet apple cider
3 eggs, unbeaten

Measure into sifter: flour, baking powder, soda, salt, cinnamon and sugar. Place shortening in mixing bowl; stir in soften. Sift in dry ingredients. Add cider and mix until all flour is dampened. Beat 2 minutes in mixer (at low speed) or 300 vigorous strokes by hand. Add eggs and beat 1 minute more.

Pour batter into 2 round 9-inch pans, lined on bottoms with paper. Bake in moderate 375 degree oven for 20 to 25 minutes. Cool. Split layers. Spread crab apple jelly over 1 layer, cover with second layer, spread with 7-Minute Frosting (tinted yellow). Repeat, covering sides with rest of frosting.
