CHOCOLATE MINT LAYER COOKIES 
COOKIE LAYER:

2 sq. (2 oz.) unsweetened chocolate
1/2 c. butter
2 eggs
1 c. sugar
1/2 c. flour

FILLING:

1 1/2 c. confectioners' sugar
3 tbsp. butter
2 tbsp. whipping cream (milk works ok but cream is better)
3/4 tsp. mint extract

GLAZE:

2 oz. semi-sweet chocolate
2 tbsp. butter
1 tsp. vanilla

Melt chocolate and butter. Beat eggs and sugar in a separate bowl. Add flour and chocolate mixture. Pour into greased 9 inch square pan. Bake at 350 degrees for 25 minutes. Cool. Beat all filling ingredients with hand mixer until smooth. Spread over chocolate layer.

For Glaze: Melt chocolate and butter, stir in vanilla. Drizzle glaze over filling. Chill before cutting.
