APPLE DONUTS 
3 eggs
1 c. sugar
3 tbsp. shortening
1/2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
3 1/2 c. flour, sifted
1 c. unsweetened applesauce
1 tsp. lemon juice

Beat eggs until light, add sugar then melted shortening. Sift baking powder, salt, nutmeg and 1 cup flour. Stir into first mixture. Add applesauce and lemon juice. Gradually add flour, just enough to make a soft dough. Chill. Roll to 1/2 inch thickness on a lightly floured board. Cut with donut cutter and fry in deep fat at 370 degrees. Drain on absorbent paper.
