STRAWBERRY CREAM CHEESE PIE | |
1 baked 9" pie shell FILLING: 1 (8 oz.) pkg. cream cheese 2 tbsp. lemon juice 1/2 pt. whipping cream, whipped 1 tsp. grated lemon rind 2 tbsp. milk 1-2 tbsp. sugar, to taste GLAZE: 3/4 c. sugar 3 heaping tbsp. cornstarch Pinch salt 1 c. water 1 tbsp. lemon juice 1/2 tsp. red food coloring (optional) 2 pt. hulled strawberries, slice if desired For filling mix cream cheese, sugar, lemon juice, rind and milk. Spread on pie. For glaze mix sugar, cornstarch and salt. Mix into paste with 2 tablespoons water. Boil remaining water and stir into sugar mixture. Cook until thick and clear. Remove from heat. Add lemon juice and coloring. When cool fold in berries, reserving some for garnish. Top with whipped cream and garnish with whole berries. |
