CISSY'S CANDY ROLL | |
2 c. sugar 2/3 c. Pet milk 80 sm. marshmallows 1 stick butter 1 tsp. vanilla Pinch of salt Put sugar, milk, vanilla, marshmallows, salt and butter in heavy saucepan. Place over medium heat, stirring constantly until it comes to a rolling boil and keep stirring. Cook 6 minutes. Remove from heat and beat until it begins to thicken. Add 1 cup chopped nuts and beat until pretty firm. Roll up in wax paper for a few seconds, then knead and shape into a log about 2 1/2 inches in diameter. Place on wax paper in a French bread pan to retain log shape. OUTSIDE OF CANDY ROLL: Make same recipe as above but when removed from heat, add 6 ounces semi-sweet chocolate chips. Beat until smooth and thick. Add 1/2 cup chopped nuts, make a ball and roll up in wax paper for a few seconds. Knead and roll into a rectangle long enough and wide enough to cover vanilla log. Roll vanilla log in chocolate sheet. Sprinkle chopped nuts on outside and return to French loaf pan. When set up, melt 1/2 cup semi-sweet chocolate chips and dribble over top of candy roll. Sprinkle with pecan meal. |
