"HEINTZ" CUCUMBER PICKLES | |
Cucumbers Salt (canning or pickling salt) Sugar Pickling spices Water Vinegar Alum Wash small to medium sized cucumbers. Soak cucumbers in the following: 1 cup pickling salt to each gallon of cold water needed to cover cucumbers. Soak 1 week. May need to skim in humid weather. Adding a few ice cubes may help. 8th Day: Drain off brine, cover with fresh hot water. 9th Day: Drain and cover with fresh hot water after splitting pickles. 10th Day: Drain and add 1 tablespoon alum to each gallon of fresh hot water to cover. 11th Day: Drain. Mix 5 cups vinegar, 5 cup sugar, 3-5 tablespoons mixed pickling spices to taste. Boil and pour over pickles. Reheat vinegar 3 mornings. Pour over pickles - last day can. (Amount of vinegar varies with amount of cucumbers.) |
