CRANBERRY NUT BREAD (OR MUFFINS) 
2 c. flour
1 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt

Sift together all dry ingredients. Combine juice of an orange, 2 tablespoons oil (enough juice to make 3/4 cups). Add 1 well beaten egg. Stir all ingredients together, only until flour is dampened. Add 1 cup chopped nuts and 1 cup raw cranberries. Pour into greased loaf pan (9 1/4 x 5 1/4 inch). Let stand 20 minutes. Bake at 350 degrees for 60-70 minutes. Or make 12 large muffins - 350 degrees for about 20 minutes or until nicely browned.
