SCOTCH BUTTER COOKIES 
4 c. flour
1 c. confectioners' sugar
1 tbsp. cornstarch
1 lb. butter

Sieve flour and mix with butter and sugar. Add the cornstarch. Put on a baking board. Mix with your hands until ingredients are thoroughly combined. Roll out with a rolling pin to about 1/2 inch thick. Take a fork and scrape across the top in a criss-cross pattern and then cut into squares. Put on ungreased cookie sheet and bake at 350 degrees for about 20 minutes.

Don't let cookies brown on top. When lightly brown on bottom, take out and let cool. Sprinkle with confectioners' sugar. Makes about 100 cookies.
