CHOCOLATE BANANA CAKE 
2 1/4 c. flour
1 tsp. baking powder
3/4 tsp. salt
3/4 c. shortening
3/4 tsp. baking soda
1 1/2 c. sugar
2 eggs
2 oz. unsweetened chocolate or Choco-Bake
1 c. mashed bananas
3/4 c. sour milk or buttermilk

Sift together flour, baking powder, and salt; set aside. Mix together shortening and baking soda; gradually stir in sugar, beat in eggs one at a time. Melt chocolate in top of double boiler. Pour into large bowl. Stir in sugar mixture and vanilla. Stir in half the sifted flour mixture and all of the mashed bananas. Stir remaining flour mixture alternately with buttermilk. Pour into 2 greased and floured 9 inch cake pans or one 8 1/2 x 11 inch loaf pan. Bake at 375 degrees for 30 minutes for the round layers or 45-50 minutes for the loaf pan. Cool in pans 10 minutes. Frost with Mocha Frosting.
