CUCUMBER RELISH 
4 to 6 cucumbers (3 1/2 c.)
6 carrots or 1 1/2 c.
2 onions (1 c.)
2 tbsp. salt
2 1/2 c. sugar
1 1/2 c. vinegar
1 1/2 tsp. celery seed
1 1/2 tsp. mustard seed

Grind vegetables; stir in salt. Let stand 3 hours; drain. Combine the remaining ingredients and bring to a boil. Add ground vegetables. Simmer, uncovered, for 20 minutes, stirring every so often. Seal in sterile jars. Makes 3 pints. Delicious on hamburgers or hot dogs. Can be stored in refrigerator for some time. Zucchini can be used instead of cucumbers.
