GREEK SUGAR COOKIES 
1 c. (2 sticks) unsalted butter, softened
1/2 c. confectioners' sugar
1 egg yolk
2 tsp. licorice-flavored liqueur or 1/2 tsp. almond extract
2 c. flour
Confectioners' sugar

Heat oven to 350 degrees. Cream butter and 1/2 cup sugar in large mixer bowl until light and fluffy. Beat in egg yolk, liqueur or almond extract. Using a wooden spoon, stir in flour until dough forms.

Roll into 1 inch balls. Place on ungreased baking sheet. Bake until cookies are light brown on the bottom about 10 to 12 minutes. Cool on wire rack. While still warm sprinkle generously with confectioners' sugar. Cool completely on wire rack. Store in cookie tin. Makes about 4 dozen.
