COFFEE MARSHMALLOW MOUSSE 
48 lg. marshmallows
1 1/4 c. double strength coffee
1 c. whipped cream
Grated chocolate

HINT: Need a quick dessert? Try Coffee Marshmallow Mousse. Just heat 48 large marshmallows with 1 1/4 cups double strength coffee and stir until marshmallows are melted. Turn into a medium bowl and chill until thickened (about 20 minutes). Fold in 1 cup of whipped cream and chill until ready to serve. Garnish with grated chocolate.

My mother made something very similar to this over 50 years ago. She used same ingredients. The only difference was she would pour the mixture into a clear decorative bowl but did not stir in the whipped cream. After a several hours in the fridge, the mixture set into 2 layers (dark coffee gel and a coffee mousse). She layered whipped cream on top with shaved semi sweet or bitter chocolate sprinkled on the whipped cream. It looked like such a decadent dessert, guests thought she spent hours creating the layers! So easy yet so impressive!
