SALMON LOAF 
1 can salmon or 2 cups
1 tsp. lemon juice
1 egg or 2 beaten egg whites
2/3 c. milk
1/2 tsp. salt
1/8 tsp. pepper
1 tbsp. finely chopped onion
1/4 to 1/2 c. chopped celery
1/2 c. cracker crumbs
1 tbsp. parsley

Preheat oven to 350 degrees. Drain salmon, remove skin and bones. Mix all ingredients together. Bake in greased baking dish for 45 minutes. Great with rice pilaf and minted green beans. Serves 4.
