VEGGIE GOOD LASAGNA 
1 cup onions
1 cup bell peppers
1 cup mushrooms
1 cup fresh spinach
1 cup zucchini
1 cup yellow squash
1 cup eggplant
1 can black beans
2 tablespoons parsley
1 egg
2 cups mozzarella cheese
1 cup casserole cheese
1/2 cup ricotta cheese
1/2 can diced tomatoes
1/2 can whole tomatoes
1 package of lasagna noodles
3 tsp of olive oil

Sauté all vegetable ingredients in the olive oil.

Mix the egg, ricotta cheese and parsley in a small bowl.

You can always add more veggies or take away. The beans add a nice added feature to the dish.
